Anything Goes Thermomix Cookie Recipe - Chocolate Chips, Nuts, Seeds, Coconut and Fruit - You Name it!

I know that quite a few of my lovely readers are also Thermomix fans, so I did promise a wee while ago that I would start to feature a few of my favourite recipes on the blog.




This cookie recipe is so versatile and I call it the 'anything goes' cookie recipe because you can chop and change it and add in your favourite ingredients as you please.

You'll Need:
  • 125g Butter (softened at room temperature)
  • 1/2 Cup Brown Sugar
  • 1/3 Cup Caster Sugar
  • 1 egg at room temperature
  • 1 Cup of Self Raising Flour
Now for the fun part add 1/2 cup of 3 (or more) of the following:
  • Chocolates: M&M's, Smarties, Chocolate Bits - White, Dark or Milk
  • Coconut
  • Dried Fruit: Apricots, Sultanas, Raisins, Cranberries, Apples or Pears
  • Seeds: Chia, Pepitas or Pumpkin
I generally try and add 3 -4 items to each batch


Method:
  1. Pre-heat oven to 180 degrees and line baking trays
  2. Cream butter and combined sugars on speed 3 for 60 seconds
  3. Add egg and mix on speed 3 for 15 seconds

  4. Add in remianing ingredients (and the inclusions you have selected) and mix on speed 3 for 30 seconds
  5. 
    I have added coconut, choc bits, sultanas and pepitas to this batch!
    
  6. Roll cookies in to small balls and flatten slightly with a fork on a tray (leave plenty of room in between as these babies spread!)
  7. Bake for 12-15 minutes until golden
  8. Leave cookies to cool on tray and enjoy!! 


Handy Tips & Tricks
  • If using M&M's or Smarties, you might want to add these last and mix lightly on soft spoon setting, or by hand
  • The sky is the limit with these cookies - so mix and match to your hearts content!!

  2. It did take me a little while to save up for one, but it has been worth every cent of saving for me (and I did it when I was working and not at home with a bub too). They do offer interest free options every now and then which can help too x
