The Easter Bunnies Favourite Carrot Cake Recipe

So we all know that the Easter Bunny loves carrots right?! Well I have it on good authority that he naturally also loves nothing more than a moist slice of carrot cake. It turns out that I have just the recipe that will guarantee the Easter Bunny will stop past your place this Easter!
 
Of course carrot cake doesn't have to be eaten just at Easter, you can whip up this delicious cake anytime you please!
 
 
  • 2-3 Carrots Grated (around 300g)
  • 1 Cup Self Raising Flour
  • 1/2 Cup Plain Flour
  • 1Tsp Bicarb of Soda
  • 1/2 Tsp Ground Cinnamon
  • 1/2 Cup Brown Sugar
  • 3/4 Cup Vegetable Oil (or other of your choice)
  •  1/2 Cup Golden Syrup
  • 3 Eggs
  • 1 Tsp Vanilla Essence or Extract
 
  1. Pre-heat oven at 170 degrees
  2. Grease and line pan, I used a 20cm round tin
  3. Peel carrots and set aside
  4. Sift the flours, bicarb of soda and cinnamon together in to a large bowl
  5. In a separate bowl, combine sugar, oil, golden syrup, eggs and vanilla. Use a whisk to combine ingredients
  6. Pour wet mixture in to dry ingredients and mix with a wooden spoon.
  7. Stir in grated carrot
  8. Place mix in pan and bake for 50 - 60 minutes
  9. Once cool, ice if desired
 
  • This recipe was taken from Taste.com.au
  • Whilst icing is optional, cream cheese frosting does go down a treat! Try this or this version, both super delish!!
  • I have topped my cake with mini Easter Eggs for a touch of easter, these would be super cute made in to cupcakes all topped with individual milk chocolate eggs at Easter time
  • Make sure you leave a slice for the Easter bunny, in return I am sure he will be extra generous with your Easter Eggs this year!!

Utterly Organised Easter Feature

Easter is almost here - can't you just smell the hot cross buns in the air?!!

I don't know about you, but I just love this time of year. It might have a little something to do with the feeling that with Easter brings a sense of guilt free chocolate eating in the name of getting in the 'festive' spirit of course! Judging by my consumption so far, I am taking the Easter festive spirit to a whole new level this year!!
 
To celebrate this beautiful little season I am going to be doing a little Easter feature in the lead up to the Easter period.

As part of this feature there will be a giveaway on a very cute Easter bunny friend thanks to Teddy Treasures, some freebie Easter printables from Be Design Solutions, a look at a few of the things I am doing at home to be a little bit festive and there will be an Easter recipe or two thrown in for good measure.

Organising my Fruit & Vegetables for the Week...

One of the best habits that I have gotten in to since having Mr B is cutting up my fruit of a Sunday night, ready for the first part of the week (around 3 days or so). I find that if the fruit is cut up and ready to go, that we are 100 times more likely to eat it for a snack and with our lunch and breakfast too.
 
 
 
Because this little routine has been saved me so much time, I got to thinking what if I could do this with my vegetables too? Wouldn't that be the most amazing time saver to have vegetables cut up and stored in containers ready to go for meals each night?! This has become my mission, so I have been trying to work out the best method of storing everything to stay fresh.
 
 
At the moment I have been using the Sistema containers that you buy at the local Supermarket pictured above (very often found priced at 50% off). These have served me okay, but only keep the fruit fresh for a few days at a time, don't have a ventilation system and ideally I would love to get at least 5 or so days out of the food in the containers to see me through to the weekend.
 
So I have been doing a bit of research - and thank you for your thoughts on my Facebook Page - and have decided to make the investment in to the Tupperware FridgeSmart set.
 
I have ordered 10 of these products - 2 in the Small Size for our Blueberries and Strawberries - 4 in the long Medium for Carrots and Zucchinis etc and 4 in the Medium for Watermelon and Mushrooms etc. Now quite honestly I could go to town and purchase these for every single vegetable that we use frequently (corn, broccoli, beans, capsicum), but I am going to start off with 10 (not sure my fridge can fit many more in!) and see how this this system pans out for me first.
 
I will be definitely reporting back on how this is working for me soon and share my Fridge Organisation with the new products. Above is a photo of my fridge at the moment.
